  • 330g Plain Flour
  • 185g Softened Salted Butter
  • 128g Caster Sugar
  • 2 Medium Eggs (1 whole egg + 1 yolk)
  • 1 tbs / 15g Ground cinnamon
  • 1 tsp / 5g Nutmeg
  • 1/2 tsp / 2.5g Ground ginger


  1. Preheat oven to 160°C (320°F) whilst chilling your baking trays in the fridge.
  2. Cream the butter in the food processor first. Followed by the sugar, then cream together.
  3. Add the medium egg & egg yolk to mixture. Sift the plain flour and all the spices together, then add and mix in until dough comes out as a ball.
  4. Knead dough until smooth, wrap in cling film and leave to chill in the fridge for 15 minutes.
  5. Line two baking trays with greaseproof paper. Sprinkle two handfuls of flour on your work surface.
  6. Roll out dough to 3mm deep, use the cutters to cut the shapes out. Refrigerate for an additional 10 minutes before baking.
  7. Place on greaseproof paper. Bake for 12-15 minutes.
  8. Leave on tray for 10 minutes and then move to a wire rack to finish cooling.
